Chickpea Frittata (Vegan)
The main ingredient in this vegan recipe is Chickpea flour. You can find it in any grocery stores (a popular brand is Bob's Red Mill Garbanzo Bean Flour). One cup of chickpea flour provides about 10 grams of fiber —which has been associated with improved LDL Cholesterol in bloodstream. Chickpea flour provides 20 grams of protein per cup. Chickpeas are a great protein source for vegetarians/vegan as they provide almost all of the essential amino acids (pairing them with a whole grain i.g. farro or brown rice, provides you with all the essential amino acids you need in your diet).
Ingredients:
1 cup Chickpea Flour
2 cup Sparkling Water
4 Tablespoon (TBS) Extra Virgin Olive Oil (EVOO)
1 Shredded Zucchini
1 Medium Onion
1 teaspoon of mixed Dried Spice ( Garlic, Sage, Pepper, Thyme and Salt).
Directions. Cut the onion and sauté with 2 TBS EVOO for 3 minutes. Add shredded zucchini and keep cooking for another 3 minutes. In a bowl mix chickpea flour and sparkling water. Then add sautéed zucchini & onion and mixes spices. Mix well. Heat the other 2 TBS of EVOO in a nonstick pan for 1 min. Add the mix. Put a lid on top and cook for a couple of minutes. When the bottom is cooked, use a dish over the pan to flip the frittata and then slide it back in the pan. Cook for another couple of minute and…. BUON APPETITO!
